Has been working in the restaurant and catering industry for over 30 years. Was trained as a chef and worked in top restaurants in NYC and Boston. Was previously the house caterer to the Greenwich Polo Grounds as well as the Hamptons Polo Grounds and ran food service at multiple Equinox Gyms. Specializes in customer experience and satisfaction catering to each person’s needs and wants. Paul brings with him an experienced culinary staff that is engaged in their role and offers quality preparation and expedient service.

Renea Dayton – Owner
Owner and creator of Hayfields, LLC, opened in 2015 in North Salem, N.Y. Previously employed at Lime Rock Park Race Track as Director of Marketing and Events for seven years. Thinks outside the box, has a keen eye for aesthetics with attention to detail & enjoys the challenge of the food service industry. Renea brings with her an active ownership and partnership team that thrives on working hard and having fun while doing it.

Amy Cilmi – Floral Designer
We are proud to be partnered with Amy’s Flowers. Amy is a local resident of North Salem, N.Y. who studied floral design with Paula Pryke in London and turned her passion into a business. Whether it’s a small dinner party, a floral gift delivery or a lavish wedding affair, Amy takes it to a new level of unique designs. Custom floral arrangements and container designs are her specialty.

Terence Miller – Wine Guy
Works for Wilson Daniels Distributors and knows how to work hard and play hard. Terence has been working with Renea for 4 years now helping to create “by the glass” as well as bottle programs for her customers. A knowledgable and savvy connoisseur of wine, Terence brings life to the table as he pairs great wine with great food.
